OUR CHEF

SAMANTHA “SAM” BLANE

An important part of any day aboard a yacht at sea are the meals and your experience aboard Katharine is no different. Our Head Chef, Samantha, who is a London City of Guilds trained chef, has gained valuable experience aboard a variety of renowned charter yachts. She brings a passion and flair to the gourmet experience to Katharine. She strives to offer guests not only delicious and beautifully presented meals using local fresh produce and foods, but also strives to keep meals light and healthy.

BUFFET LUNCH

  • Freshly Baked Sourdough Bread
  • Honey Roasted Butternut and Beetroot Salad, Crumbled Feta and Red Onion Shavings
  • Mixed Greens Salad with Cherry Tomatoes, Toasted Almonds, Cranberries and a Drizzle of Honey Mustard Vinaigrette
  • Warm Grilled Mediterranean Vegetables Finished with an Aged Balsamic Reduction and Torn Basil
  • House-made Pasta Sautéed with Local Olive Oil, Crushed Red Pepper, Garlic, Fresh Parsley and Grated Parmesan Cheese
  • Baked Red Snapper, Tomato and Avocado Salsa with Lemon Oil
  • Plateau De Fromage Mixed Cheese Plate
  • Mango and Blueberry Salad with House-made Coconut Sorbet

DINNER

  • House-Made Butternut Squash Ravioli with Fresh Sage, Brown Butter and Toasted Hazelnuts
  • Demitasse of Butternut Squash and Apple Soup with Toasted Pepitas and Dehydrated Apple
  • Grilled Eggplant Filled with Wilted Spinach, Toasted Pine Nuts and Prosciutto
  •  Pistachio and Cranberry Crusted Filet De Saumon, Roasted Zucchini Buttons, Grilled Asparagus and Fresh Fig Preserve
  •  Roast Chicken Spinach Roulade, Sweet Potato Purée, Smoked Paprika Broccolini and a Sweet Sherry Reduction
  •  Black Pepper Crusted Fillet Mignon, Gorgonzola Croute, Mushroom Duxelle, Roasted Tomato Jam, Caramelized Pearl Onions and a Red Wine Glaze
